Ravioli speck e mirtilli con pesto di agrumi, capperi e mandorle con Olio Flaminio Delicato

Ingredienti per 4 persone :

• 300 gr. di ravioli speck e mirtilli Valsugana Sapori
• 1 cucchiaio di capperi
• 2 cucchiai di mandorle affettate
• 2 clementine bio
• 4 grani di pepe rosa
• 1 stelo di basilico
• 1 stelo di prezzemolo
• 4 fragole
• olio Flaminio delicato extra vergine di oliva
• condimento Flaminio mosto d’uva cotto
• una noce di burro


Procedimento: inserite nel vaso del mixer i capperi dissalati, le mandorle,il prezzemolo, il basilico,il pepe rosa, la buccia di una clementina , il succo di due clementine e l’olio extra vergine di oliva Flaminio Delicato. Frullate sino ad ottenere un composto omogeneo.
Cuocete in abbondate acqua salata i ravioli, scolateli al dente e fateli saltare con una noce di burro.
A fuoco spento aggiungere il pesto di agrumi, capperi e mandorle, fate saltare velocemente.
Presentazione: porre al centro del piatto i ravioli, sopra, al centro una fragole affettata e condita com qualche goccia di condimento Flaminio a base aceto balsamico e mosto d’uva cotto.

• Some terms commonly used on olive oil labels are anachronistic, such as “first pressed” and “cold pressed”. Since most extra virgin oil nowadays is made with centrifuges, it isn't “pressed” at all, and true extra virgin oil comes exclusively from the first processing of the olive paste.
